Paladin. Plate, mail, shields and almost every weapon type are wearable, so a single Paladin clear unlocks more appearances than any other class. Warriors are a close second (plate, mail, shields, but no healing). If you are building a transmog farmer from scratch and care about wardrobe coverage rather than speed, roll a Paladin.

Is Demon Hunter really faster than Druid for old raids?

In practice, yes, in raids with vertical layouts or long corridors. Glide lets a Demon Hunter drop straight down to a boss room in places where a Druid still has to run the stairs. Druids catch up in outdoor or flat instances, where Travel Form's instant mount speed and Prowl matter more. Both are far ahead of every other class; pick the one you already have at max level.

Do I need a max-level character for transmog runs?

For solo runs, you want max level and reasonable current-expansion gear. Legacy raids scale down hard, so even mid-tier gear is enough to one-shot most bosses from the last two expansions before the current one. Fresh alts can still farm dungeons from older expansions, but raid bosses from the previous expansion will hit too hard until you hit the cap.

Which class is best for farming transmog in a group?

In a group the mobility gap stops mattering and armor coverage matters more. Bring one character per armor type (a Warlock or Mage for cloth, a Druid or Demon Hunter for leather, a Hunter for mail, a Paladin or Warrior for plate) and everyone can trade loot they cannot use to whoever needs the look. What weapons should my farmer be able to use?
