Havoc Demon Hunter is the best overall transmog farming class, because once legacy bosses melt in seconds the real bottleneck is travel time. Glide, double jump and Fel Rush chain you across old raids far faster than a mount can. Death Knight, Beast Mastery Hunter and Druid follow closely, trading a little speed for survivability, pet safety and better open-world routes.

Does your class limit which transmog you can collect?

Not in the way most people assume. In older raids cleared solo, bosses generally drop from their full loot table rather than filtering to your armor type, so a Demon Hunter can pull plate, mail and cloth out of the same run. That is the whole reason speed beats armor class here.

What your class does limit is what you can wear once collected, and whether you can survive the run at all. Appearances go to your account-wide collection either way.

Which class is safest for old raids with nasty mechanics?

Death Knight. A lot of legacy one-shots are magic damage on a timer, and Anti-Magic Shell plus Death Strike lets you ignore the mechanic instead of learning it. Hunter is the runner-up for a different reason: the pet holds threat while you stay out of range, and Feign Death resets a pull that goes wrong.

Paladin deserves a mention for the same reason. One bubble converts a wipe into a walk-out, which matters when you are farming a lockout you only get once a week.

What about open-world and world-drop farming?

Different job, different class. Druid wins here because Travel Form and Prowl cut the dead time between spawn points, and you can loop a route without stopping to mount. Demon Hunter is still excellent in zones where Glide covers long descents. For farming specific humanoid mobs that drop greens, any class with strong instant AoE works — the limiter is respawn rate, not your damage.

Is a dedicated transmog alt worth leveling?

If you run legacy content more than once a week, yes. A max-level Demon Hunter or Death Knight turns a 40-minute clear into a 15-minute one, and both classes are forgiving to play badly. If you only dip into old raids occasionally, use whatever you already have at max level — the gear check for decade-old content is generous.
