Open Options → Accessibility (Advanced Options in Classic) and drag "Max Camera Distance" all the way right, or type /console cameraDistanceMaxZoomFactor 2.6 in chat and reload. 2.6 is the hard ceiling Blizzard allows — no addon, macro or config edit goes past it. The setting resets on some clients after patches, so re-check it when a new build lands.

Why does my camera keep resetting to close-up?
Two usual causes. A patch or a fresh install rewrites Config.wtf and drops the zoom factor back to default, and some UI addons write their own camera values on login. Re-run the console command after a big patch; if it reverts every session, disable camera-related addons one at a time to find the culprit.
How do I zoom out further in WoW Classic?
